Cognacs display tremendous aromatic complexity, with a wide range of aromas and flavors. Are you familiar with Cognac aromas, ranging from floral to oaky and even spicy?
Where did the aroma wheel originate?
In 2009, the BNIC brought together fifty head sommeliers, cellarmasters, tasters, and specialized journalists from around the world to taste and categorize the various aromatic components of Cognac.
Over four days, these fifty “noses” tasted and recorded the aromas of 100 different Cognacs. A compilation of these 5,000 tasting notes was used to define the aromatic palette of Cognac aromas and create the aroma wheel.
