Still, cocktail bars continued to feature cognac as a base in classic cocktails as well as in new and innovative ones, meant to attract a younger drinker.<br \/>\nConsumers also took the time in 2020 to educate themselves on the category, willing to try smaller producers with authentic stories in addition to the well-known names. And, the category as a whole is broadening its diversity.<br \/>\nThese are trends that Cognac Educators from around the country saw during this unprecedented year, and they predict 2021 will trend in the same direction.<\/p>\n<h2 style=\"text-align: left;\"><span style=\"font-size: 24px;\">ENJOYING COGNAC AT HOME<br \/>\n<\/span><\/h2>\n<p style=\"text-align: justify;\">\u201cAs many of us shelter at home, more people are interested in making their own cocktails,\u201d says Dan Nicolaescu, beverage director of Brandy Library and Copper and Oak (New York, NY). \u201cWith a drink in hand and a different prism of the situation, maybe the light at the end of the tunnel is brighter.\u201d<\/p>\n<p style=\"text-align: justify;\">\u201cCognac has been doing very well in online retail, and I expect that to continue,\u201d says ms. franky marshall, Modern Bartender (New York, NY). \u201cThere are currently a wide variety of expressions available for purchase online &#8211; representing not just the big houses, but lesser known ones as well. That\u2019s encouraging, as it gives consumers ever increasing options to continue supporting the brands they love without leaving home, while giving the smaller brands a chance to compete.\u201d<\/p>\n<h2 style=\"text-align: justify;\"><span style=\"font-size: 24px;\">EAN INCREASE IN MILLENNIAL DRINKERS<\/span><\/h2>\n<p style=\"text-align: justify;\">\u201cOne thing I\u2019m seeing is that a larger population of younger guests are enjoying and specifically asking for cognac drinks,\u201d says Ezra Star, former general manager of Drink (Boston, MA). \u201cI\u2019ve also seen a huge change in how it\u2019s ordered, it is no longer just the big names being called for, but consumers are looking to explore the category itself.\u201d<\/p>\n<p style=\"text-align: justify;\">\u201cThe VS category will continue to lead USA sales, introducing a wider audience to highquality eaux-de-vie, and open up the aged and terroir-specific expressions,\u201d says Linda Pettine, Associate Professor, Johnson &amp; Wales University, College of Food Innovation Technology. \u201cMillennial consumers will embrace cognac as an affordable luxury spirit and seek out limited and distinct offerings.\u201d<\/p>\n<p style=\"text-align: justify;\">\u201cI would predict, if one can be so bold, that sales will increase with the younger audience both on premise and off premise,\u201d says Nicolaescu. \u201cThe history of cognac is very fascinating for many people and the younger audience seems far more comfortable exploring the category.\u201d<\/p>\n<h2 style=\"text-align: justify;\"><span style=\"font-size: 24px;\">CLASSIC AND INNOVATIVE COGNAC COCKTAILS AT BARS<\/span><\/h2>\n<p style=\"text-align: justify;\">&#8220;Aside from more at-home drinkers, the current cognac trend I&#8217;m seeing is a large surge in cognac cocktails in bars,\u201d says Star. \u201cIt seems as if every bar I visit has at least one cognac cocktail on its menu.\u201d<\/p>\n<p style=\"text-align: justify;\">\u201cI reopened Barmini, with a flight experience and a classic-cocktail menu on the side,\u201d says Miguel Lancha, beverage director of Jos\u00e9 Andr\u00e9s\u2019 ThinkFoodGroup. \u201cTwo of the cocktails on the classic\u2019s list are cognac-based and work well. And, using cognac in drinks that seem innovative is how to bring the spirit more to the forefront.\u201d<\/p>\n<p style=\"text-align: justify;\">\u201cThe cocktail culture will continue to embrace the younger expressions (VS and VSOP) as a versatile mixable spirit,\u201d says Pettine. \u201cIts affinity to teas will increase its position on cocktail menus.\u201d<\/p>\n<p style=\"text-align: justify;\">\u201cAs for on premise business, as everyone else, I don\u2019t have an exact idea of how it will evolve,\u201d says Nicolaescu. \u201cI do know bars and restaurants will always exist, as everyone needs a \u2018third home,\u2019 and cognac will always have a place behind the bar!\u201d<\/p>\n<p style=\"text-align: justify;\">\u201cCognac will continue to be one of the <em>de rigueur <\/em>(aka \u201cmust used\u201d) spirits as a base for cocktails on menus,\u201d says marshall. \u201cIt&#8217;s a sign of a good bar program to include cognac\u2014along with the usual suspects\u2014in house cocktails as well as the classics.\u201d<\/p>\n<p style=\"text-align: left;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-16652 aligncenter\" src=\"https:\/\/www.cognac.fr\/wp-content\/uploads\/trends-cognac-2021.png\" alt=\"\" width=\"1068\" height=\"305\" \/><\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\"><strong>ABOUT THE BNIC <\/strong><\/p>\n<p style=\"text-align: justify;\">The BNIC (Bureau National Interprofessionnel du Cognac) represents, fosters and protects the Cognac Appellation d\u2019Origine Contr\u00f4l\u00e9e in France and abroad.
